Broiled Spam Appetizers


This recipe was a bit tougher than the first one. Plus, the gross factor was higher simply because I had to mash up the SPAM.


Ingredients:

One can SPAM, finely cubed
1/3 Cup shredded cheddar cheese
1/4 Cup finely chopped celery
1/4 Cup mayo
1 TBS chopped parsley
1/8 tsp hot pepper sauce
Crackers, toast triangles, or party rye slices

Combine all ingredients in a bowl and mix well. Place on baking sheet and broil 1-2 minutes until cheese is melted.

Makes approx. 32 appetizers.


OK. These appetizers were pretty simple to make. I ran into problems with the broiling, as I burned a few of the cracker bottoms. Burnt SPAM and crackers are not yummy at all. The appetizers actually looked appealing. I felt like they tasted pretty good. The kids took bites willingly, and Rowan really seemed to enjoy his. Wil ate more than one, and Gramma and Grampa gave the recipe a thumbs up.



I would give this recipe a 7/10 overall, considering taste, presentation, and acceptance by family.
